Frothy Friday - Pumpkin Spice Latte

It is that time of year...pumpkins and cinnamon...everywhere.  I love it!  Check out this recipe I found today.  I haven't made it, but it sounds like it is "to-die for"!  It's the "DIY" version of Starbucks!  Yowza!

Pumpkin Spice Latte
makes 1-2 servings
Ingredients:
2 cups milk
2 tablespoons canned pumpkin OR 1 teaspoon of Torani Pumpkin Spice Syrup 
2 tablespoons sugar or sugar substitute - you can halve this amount
2 tablespoons vanilla extract
1/2 teaspoon pumpkin pie spice
1-2 shots espresso (about 1/4 cup of espresso or 1/2 cup of strong brewed coffee if you don't have an espresso machine.)
Directions:
In a saucepan combine milk, pumpkin and sugar and cook on medium heat, stirring, until steaming. Remove from heat, stir in vanilla and spice, transfer to a blender and process for 15 seconds until foamy. If you don't have a blender, don't worry about it - just whisk the mixture really well with a wire whisk.
Pour into a large mug or two mugs. Add the espresso on top.
Top with whipped cream and sprinkle pumpkin pie spice, nutmeg, or cinnamon on top.

Frothy Friday: Chocolate Cherry Frappé


Confession #1.  I was craving Ben and Jerry's Cherry Garcia Ice cream when I was looking for a recipe to share for Frothy Friday.

Confession #2.  I don't own some of the ingredients that the recipes calls for, so I haven't made this...yet.

The only hurdle I would be up against on this recipe is going to the store to buy two ingredients that I don't currently have.  Other than that, this recipe sounds like it will be a breeze to make.  ...And I happen to like easy, no-fuss recipes.  Because really all I want

Frothy Friday: Chilled Caramel Coffee!

Frothy Friday: FREE Coffee

~ HAPPY EARTH DAY! ~
Just wanted to take a second to inform all my fellow coffee lovers that Starbucks is giving out FREE coffee today in honor of Earth Day!  How fabulous is that?  I don't know about you but, I love me some FREE stuff!  All you have to do is bring in your own reusable cup/tumbler.  If you don't have one, Starbucks is offering 20% off on their travel mugs today.  Here's a little tip - if you buy one of their mugs, you get $.10 off every refill!  If you don't have a travel mug and don't want to buy one, but still want to take advantage of this fabulous freebie....just go to your local Starbucks and order your coffee "For Here" and they will pour you a nice hot cup-o-joe in a mug to drink "in-house".  So...lets say you don't like coffee - (shocking!) that's ok, they'll give you tea instead.  They are so kind.  Happy Earth Day Everyone!  Drink up!

Frothy Friday: Coconut Iced Coffee


This week's yummy Frothy Friday coffee creation was found at: The Creative Pot.  The one thing that jumped out at me when I found this recipe was the word Coconut.  I can't help it, but every time I hear the word coconut....my mind drifts to a happy place.  A sunny, warm, sandy, place where the aromas of coconuts and the smell of the sea dance in my head.  Given that my town was just hit with the eighth snowfall of the season, I will take anything I can get that makes me think of warmer climates & today...this is it!  Marisa at The Creative Pot is the genius behind this drink.  Go check out her website!  She has a lot of other recipes that I want to try.  Some fun exotic stuff.  Enjoy!

So here's the simple How-Tos for the Coconut Iced Coffee:

Coconut Iced Coffee
A Creative Pot original

Serves 1


If you really can't bring yourself to use instant coffee, brew a pot of triple strength coffee and use a few tablespoons of that as the base of this iced coffee instead.


2 tsp good-quality instant coffee (I like Jacobs)

2 1/2 tsp sugar

2 tbsp boiling water

1/4 tsp vanilla essence

1/4 cup coconut milk

1/4 cup ice cold water

1/2 cup cold milk

a few ice cubes


1. Add coffee granules, sugar and boiling water to a glass, stirring until the coffee and sugar has dissolved.

2. Add coconut milk and vanilla essence, stirring to fully incorporate it into the coffee mixture. 

3. Top up with cold water and cold milk, add a few ice cubes and there you have it. See, told you, easy as pie.

 Don't be tempted to add the last few ingredients in any old order - the coconut milk will not properly mix in if added after the cold water and milk. For some reason it needs some heat to work its magic. This bit of info is brought to you by:  Bitter Experience.

Frothy Friday: Creamy 100-Calorie Coffee


Since it's the holidays, there is fudge, cookies, candy, etc.... tempting you everywhere you look right now.  It's almost impossible to stick to a diet, but I found a delicious coffee recipe that's only 100 calories!  So drink up & be Merry.  Tis the season to be Jolly!

....And it's a cinch to make.  Here's the low-down:


Prep Time: 15 minutes
Cook Time: 10 minutes
Yield: Makes about 4 servings (serving size: 1 cup)

Ingredients

  • 2 1/2  cups  hot espresso or strong brewed coffee
  • 2  cups  1% low-fat milk
  • 3  tablespoons  sugar
  • 1  teaspoon  vanilla extract

Preparation

1. Whisk together all ingredients in a medium saucepan over medium heat, and cook, whisking occasionally, 10 minutes or until steamy.
Creamy 100-Calorie Iced Coffee: Prepare recipe as directed. Let cool completely (about 20 minutes). Pour 1 1/2 cups coffee mixture into compartments of 1 ice cube tray, and freeze 4 hours or until firm. Chill remaining coffee mixture until ready to serve. Place coffee ice cubes in a pitcher, and pour remaining coffee mixture over ice cubes. Serve immediately. Prep: 15 min., Cook: 10 min., Cool: 20 min., Freeze: 4 hr.

Frothy Friday: Amaretto Fudge Cappuccino


This week's Frothy Friday coffee recipes comes from 
Nestle - Coffee Mate's website.
Makes me warm just thinking about it! 

Here's the simple recipe.
It involves Taster's Choice Coffee...
(They used to have the best comercials.  Oh how I miss those!)
Yield: 1
Ingredients:
1 cup boiling water
1 tablespoon NESCAFÉ TASTER'S CHOICE House Blend 100% Pure Instant Coffee Granules
2 tablespoons Amaretto Flavor NESTLÉ COFFEE-MATE Powdered Coffee Creamer
1 tablespoon NESTLÉ NESQUIK Chocolate Flavor Syrup
Instructions:
COMBINE water and coffee granules in large mug; stir until coffee is dissolved. Stir in powdered creamer and chocolate syrup. Top with whipped cream and chocolate shavings, if desired.

Frothy Friday: Almost-Famous Mocha Frappes












Happy Frothy Friday! I found another fabulous coffee drink to share with you! This one is from the Food Network.

....Once again...I'm going easy on you. The ingredients are simple and I don't think you'll even have to make a trip to the store. Now you're probably thinking "cold drink during cold weather...No Thank you". I understand. That would be crazy talk. ....So I suggest you throw some logs in the fireplace.... grab a blanket, a good movie, and then drink this Almost Famous Mocha Frappe! It will be the perfect combo for some nice, cozy, relaxation.

Frothy Friday - Vietnamese Coffee Sundaes with Crushed Peanut Brittle


It's Friday Yea...and to celebrate that take a look at this recipe that I found on Foodandwine.com - I haven't tried it yet, but it looks delicious.
It sounds a little labor intensive, but don't think about it like it's just a drink. It's a dessert. Desserts take time to make and usually worth the effort.
